No-nasty Muesli


Muesli, natures gift to lazy gals like me. It's full of nuts and seeds and fruit, so it's gotta be healthy right? Well it's a bit up for debate, though the sugar concentration is high in most commercially made muesli the fibre and minerals you get from it is beneficial.
But what if I told you there was a way to keep the minerals, fibre and protein and ditch the sugar and is fully customisable? Here it goes:

The no-nasty muesli:
1. Base
To start off with find your base, usually I use buckinis, oats and quinoa. What you're aiming for is something that's gonna buff up the recipe so it's not a measly few nuts and fruit (essentially so it's not honey roasted scroggin'). My ingredients give the muesli some crunch and chewiness, I also added desiccated coconut for the taste! Feel free to add what ever you want!


2. The Flourishes
The next step is deciding what to spice up your muesli with. For the recipe pictured I used dried apricot, raisins, almonds, hazelnuts and walnuts. These provide flavour and further crunch and chewiness. You'll want to roughly chop all components, no one fancies whole apricots in cereal. Add to the mix (you'll want a big bowl).

 
3. Make it Hella Tasty
Honey, maple or  agave syrup, coconut nectar add anything you like to sweeten it. Also add some oil of some kind, I used coconut, this gives it a good consistency. If you like you can add some health supplements, I added maca powder, to balance the hormones (you know how they can be). Cinnamon and other spices are also great components.


4. Get Grubby
Time to mix all the yumminess together. Use your hands to need in the sticky sweeteners and oil. Using your hands melts the coconut oil and give the mixture a thick consistency. Make sure everything is mixed you don't want clumps. Then spread the mix out in a pan.


5. Toast and Jar
Put the tray in the oven (at 180º C / 350º F) and cook for around 30 minutes or until toasted and golden, make sure if the tray is deep you mix so muesli is toasted evenly. Put in your choice of container and enjoy next time you get outta bed and don't wanna cook!
